  • I had the opportunity to work with (and for) Lynn while she was
    employed at L&M. She did listen to the people she represented and
    based her decisions on their information. Unlike the leadership in Health Care today, she “walked the walk as well as talked the
    talk”. While not all decisions went in favor of the staff wishes, Lynn knew first hand the impact each decision made. Todays’
    health-care leadership focus is on studies, trends, a literature
    search or some other method far removed from what actually
    happens in the hospital. Indeed, the nursing leadership may not
    even have been to a traditional Nursing Program or obtained
    their undergradute degree in Nursing.

    Hi Winnie,

    Thanks for commenting! I can see where this could be unclear, especially since the recipe is almost too simple. Just mix the pumpkin and cake mix with an electric mixer until well blended. Then you can add in chocolate chips, nuts, raisins, anything that would be yummy with pumpkin. One thing to note is that the batter will be really thick so it doesn’t settle into the cups like a regular muffin batter would. If you just leave it, the tops will have a nice organic look. If you want them to be more presentable, just smooth them with a knife before putting them in the oven. I like to heat up cream cheese frosting in the microwave for about 15 seconds and drizzle it on top. Hope this helps and happy baking!

    Hi folks, this is in regards to the Homemade Pumpkin Muffin Recipe in the Oct. 19-Nov 1 issue. The recipe calls for a box cake mix. Do I make the cake as follows on the box and then add the pumpkin & choco. chips or just dump the dry mix into a bowl add pumpin an choco. chips? Please make this clear as to not waste a cake mix. Thank you for putting recipes in. We who love to bake enjoy them!
